
Marinated aspen mushrooms

Ingredients
- aspen mushrooms – 800 grams;
- salt – 1 tbsp (with a heaping);
- vinegar – 2 tbsp;
- sugar – 1 tsp;
- cloves – 2 buds;
- black peppercorns – 11 pieces.
Preparation
1. Prepare the ingredients. The aspen mushrooms should be fresh, without visible damage or spots. Rinse them well under running water and dry them.

2. Cut the aspen mushrooms into medium cubes and transfer them to a deep pot. Add 2 cups of water and place on medium heat.

3. Stirring occasionally, wait for it to boil. After that, cook the mushrooms for another 5 minutes. Don’t forget to remove the foam that forms.

4. Place the aspen mushrooms in a colander and rinse them with cold running water.

5. Transfer the mushrooms back to the pot.

6. Pour in enough water to cover the mushrooms by about 1 centimeter.

7. Place the pot on medium heat and wait for it to boil. Once it starts boiling, simmer the mushrooms for 30 minutes, removing any foam that forms periodically.

8. After the specified time, add sugar.

9. Add salt.

10. Next, add black peppercorns and cloves. Thoroughly mix all the ingredients and continue cooking for another 10 minutes.

11. Pour 2 tablespoons of vinegar into the pot and mix everything thoroughly. Then cover the pot with a lid and cook for another 5 minutes.

12. Fill the sterilized liter jar first with mushrooms, then with the marinade.

13. Cover with a sterilized lid and seal.

14. Turn the jar upside down and let it cool in this position.
