Ingredients

  • beets – 1 kg;
  • white sugar – 1 tablespoon heaped;
  • rock salt – 1 tablespoon leveled;
  • bay leaf – 2 pcs;
  • clove – 4 pcs;
  • allspice – 4-5 pcs;
  • 9% vinegar – 70 ml;
  • drinking water – 1 l.

Preparation

1. Prepare the ingredients. Beets for canning can be of any size – from the smallest to the largest. The main thing is that they should be sweet, without streaks, and dark burgundy in color. Prepare jars and lids by sterilizing them in any convenient way.

2. Boil the beets in plain water. Small specimens are boiled for half an hour, while large ones – for an hour or even longer. Readiness is checked by piercing the roots with a fork – it should pass easily to the very center. Then peel the fruits. This will be very easy to do under cold running water. 3. Next, cut the root vegetable into cubes of 1.5 centimeters. You can grate it on a coarse grater or even on a special grater for Korean carrots – it all depends on how this preparation will be used later. The diced cubes can be immediately added to vinaigrette, any salads, or borscht. Beet strips will also be useful for salads, herring under a fur coat, or borscht. Whether to grate the beets or cut them into cubes is up to you; it will not affect the taste.

4. Process all root vegetables in the chosen way.

5. For the marinade, put salt, sugar, cloves, allspice, bay leaves into a pot with water and place it on the heat. Boil the marinade for 5 minutes to allow the aroma of the spices to fully reveal.

6. Then load the prepared beets into it.

7. Bring the mixture to a boil and pour in the vinegar.

8. Next, boil the beets for exactly 2 minutes, no more.

9. After that, distribute it along with the marinade into jars, filling them to the very top.

10. Screw on the lids and turn the jars upside down.

11. If everything is done correctly and the lids are not leaking, wrap the jars in a blanket and leave them until completely cool.
