
Pumpkin cupcakes with chocolate glaze
Delicious pumpkin cupcakes – an impressive homemade bake that is simple and quick to prepare. Ingredients
To prepare the pumpkin cupcake batter you will need:
- flour – 250 g;
- baking powder – 5 g;
- soda – 2 g;
- salt – a pinch;
- cinnamon – 2 g;
- ginger powder – 2 g;
- nutmeg – 1 g;
- vanillin – 1 g;
- melted butter – 100 g;
- one large egg;
- baked pumpkin – 250 g;
- sugar – 110 g.
To prepare the glaze you will need:
- sugar – 50 g;
- cocoa – 50 g;
- milk – 40 ml;
- butter – 20 g.

Preparation
1. Prepare the batter. Combine the flour, spices, seasonings, and baking powder.

2. In a separate container, use an immersion blender to combine the egg, cooled butter, pieces of pumpkin, and sugar.


3. Gradually add the dry mixture to the resulting mass. Mix everything well.

4. Place the silicone cupcake mold on a baking sheet. Line each cell of the mold with a paper liner and fill 2/3 with the pumpkin batter.


5. Transfer the baking sheet to the oven. Heating temperature – 180˚C. The baking time for the cupcakes is 30 minutes.

6. Prepare the glaze. In a small saucepan, pour in the milk, add cocoa and sugar. Mix everything. Cook the resulting mass for five minutes. During this time, the chocolate mixture thickens.

7. Remove the cooked glaze from the heat. Stir in the butter.

8. Decorate the cooled cupcakes with thin strands of slightly cooled chocolate. It is easiest to do this using a piping bag or a paper cone. For additional decoration, use ready-made sugar confetti or any crushed nuts.
