
Zucchini like mushrooms for the winter
A wonderful preparation, zucchini like mushrooms for the winter, is suitable for both a family table and a festive feast. In fact, it’s a salad with one ingredient, which is marinated with a lot of garlic, herbs, and spices. The zucchini comes out firm and tastes reminiscent of mushrooms. Considering that this vegetable often has a large harvest and its price is low, you can make a lot of such preparations without much hit to your wallet.
Yield: 2 half-liter jars and another 250 grams remains for tasting.
Time to prepare: 4 hours + 24 hours to cool.

Ingredients
- zucchini – 1 kg;
- garlic – 17 g;
- rock salt – 17 g;
- black ground pepper – 1/3 tablespoon;
- white sugar – 60 g;
- 9% vinegar – 60 g;
- odorless vegetable oil – 100 ml;
- fresh dill, parsley – a bunch.
Preparation
1. Prepare the ingredients for making zucchini like mushrooms for the winter. For this preparation, both young and old zucchinis are suitable; just peel the skin off the latter and remove the soft center along with the seeds. For the young ones, cut off only the stem.

2. Cut the zucchini into cubes (about 1.5 centimeters).

3. Place them in a wide bowl where everything can be easily mixed.

4. Chop the fresh herbs.

5. Transfer it to the bowl with the zucchini – it will not only improve the appearance of the preparation but also give it an original flavor.

6. Press the garlic through a press into this bowl – this will instantly enhance the aroma and make it more vivid.

7. Season everything with salt and sugar.

8. Pour in the vinegar, which is not only an excellent preservative but also models the taste of the marinade well.

9. Immediately add the oil.

10. And season everything with ground pepper.

11. Mix everything thoroughly, trying not to damage the zucchini cubes.

12. Place the bowl in the refrigerator for 3 hours, covered with a lid. During this time, the zucchini will release their juice and marinate. Boil the lids, and just wash the jars well (sterilization is not necessary, as the sealing will be sterilized in this glass container).

13. After the specified time, the preparation will be well soaked with its own juice. Mix everything again.

14. Distribute the zucchini into the jars and pour all the released liquid into them.

15. Place a piece of fabric at the bottom of a pot and place the filled jars in it, covering them with lids. Also, put the leftover for tasting in a small jar and place it nearby.

16. Fill with warm water up to the shoulders of the jars.

17. Sterilize the preparations over medium heat for 10 minutes after boiling starts (for half-liter jars). Liter jars will require more time – 15-20 minutes.

18. At the end of the specified time, carefully remove the jars from the boiling water and tightly screw on the lids. Check the reliability of the sealing by turning the jar upside down.

19. Wrap the sealed jars in a towel and a warm blanket. Leave in this heat bath until completely cool (this will take about 24 hours).

20. Zucchini like mushrooms for the winter is ready. It’s best to store them in a cool, dark place, but if there isn’t one, a cupboard in a regular apartment will do too. They will reliably last until the next harvest.

In winter, served with boiled potatoes, sprinkled with onion, the firm marinated zucchini will be eaten in a moment. And they can really be mistaken for mushrooms – give it a try. Enjoy your meal!
