Preparation
1. The cucumbers are thoroughly washed. This stage of salting is given special attention, as the further preservation of the conservation may depend on it. If any unnoticed contamination remains on the fruits, the preparation may sour and pop the lid off the jar. Each cucumber is rinsed separately, inspecting all sides. Clean fruits are placed in a basin of cold water, periodically replacing it with fresh water. The cucumbers are soaked in a cool place for no less than 5 hours, and longer if necessary.
2. When the cucumbers have strengthened in the cool water, the sealing stage begins. The containers for conservation are pre-washed in a soda solution and rinsed with clean water. Then the glass containers and lids are sterilized - over steam, in the oven, or in the microwave. After that, the cucumbers are removed from the basin, rinsed with fresh water, and allowed to drain. The tip is cut off each fruit from the tail side.
3. In the sterilized jars, garlic cloves and chopped herbs prepared for pickled cucumber conservation are placed. The herbs are also thoroughly washed before chopping. Immediately after this, the cucumbers are tightly packed in the jars, vertically, row by row.
4. The next row of cucumbers is laid on the first, interspersing the rows with herbs.
5. The top of the second row of cucumbers is also covered with chopped horseradish leaves and dill umbrellas.
6. In a pot, heat water to a boil and carefully pour it over the cucumbers packed in jars. The jars are covered with lids and left for 15 minutes. Then the water is drained into the pot and brought to a boil again. The cucumbers are poured with boiling water a second time and left for 15 minutes. After this, the water is drained into the pot again, brought to a boil, salt, sugar, and pepper peas are added, and the marinade is boiled over low heat for 2 minutes, then vinegar is poured in according to the recipe. A pinch of mustard seeds is added to the liter jars with cucumbers and filled with boiling marinade.
7. The jar is tightly sealed with a metal lid, turned upside down, then wrapped in a warm blanket and left overnight. Pickled cucumbers are stored in the apartment in a cool place.
