For preparing rustic oven-baked potatoes, it is best to use the "Red Scarlett" or "Agata" potato varieties. They have a dense texture that helps maintain the shape of the potatoes during cooking and have a good taste that complements the other ingredients of the dish. You can also use the "Zhar-ptitsa" or "Nevsky" varieties, which are also suitable for frying and baking in the oven.

Ingredients
- potatoes - 1 kg;
- vegetable oil - 5 tablespoons;
- paprika - 1 teaspoon;
- turmeric - 1 teaspoon;
- dried garlic - 1 teaspoon;
- potato spices - 1 teaspoon;
- salt - 1 teaspoon.
Preparation
1. Prepare all necessary ingredients. Peel the potatoes. We need 1 kilogram of peeled potatoes. Choose potatoes of roughly the same size so that the wedges have the same length.

2. Cut each potato in half and then cut into wedges. Try to make the wedges of uniform thickness so that they cook evenly.

3. Transfer the potatoes to a pot, cover with hot water, and place on the heat. As soon as the water boils, set a timer for 3 minutes and then remove the pot from the heat. Drain the water and leave the potatoes in the pot to cool slightly.

4. Meanwhile, in a small bowl, mix all the spices, add salt, and pour in the vegetable oil. Mix well.

5. Pour the prepared oil and spice mixture over the slightly cooled potatoes in the pot, cover the pot with a lid, and shake vigorously. This will evenly distribute the oil to coat each piece of potato.

6. Line a large baking sheet with foil. Spread the potato wedges in a single layer, keeping a small distance between them.

7. Bake the rustic potatoes in the oven at 200 degrees for 20-30 minutes. If your oven allows for higher temperatures, feel free to increase it; the higher the temperature, the quicker the potatoes will cook and the tastier they will be, as they will definitely turn out soft inside due to the pre-boiling, while the outside will be crispy and aromatic.
