The fact is that the fruits are sliced into rounds and boiled in tomato with aromatic spices. As a result, you get crunchy and fragrant cucumbers that have not lost their firmness. The tomato sauce is so delicious that it is usually mopped up with bread until the last drop.

Yield: 1 jar (750 grams).

Preparation time: 30 minutes + 8-10 hours to cool under a blanket.

Ingredients

  • cucumbers – 500 g;
  • tomatoes – 350 g;
  • garlic – 35 g;
  • white sugar – 50 g;
  • rock salt – 12 g;
  • odorless vegetable oil – 40 ml;
  • paprika – 0.5 tsp heaped;
  • khmeli-suneli – 1 tsp heaped;
  • chili pepper – 1 pc;
  • 9% vinegar – 15 ml.

Preparation

1. Prepare the ingredients. You can take cucumbers of any size. Adjust the amount of chili pepper to your taste. Sterilize the jars and lids.

2. Cut small cucumbers into rounds of 1.5 centimeters, and large ones into 1 centimeter.

3. Remove the stalk from the tomatoes, then twist them with the skin into tomato using a blender or meat grinder.

4. Finely chop the chili pepper.

5. Crush the garlic in a press.

6. Pour the tomato into a wide pan with high sides. Add salt, sugar, khmeli-suneli, and paprika.

7. Pour in the vegetable oil.

8. Add the chili pepper.

9. Pour the cucumbers into this tomato mixture and set the burner to medium heat.

10. Boil the mixture from the moment of boiling for exactly 3 minutes.

11. Then add the garlic, stir everything, and simmer for another 1-2 minutes. It is important here not to overcook the cucumbers so that they remain crunchy.

12. For safety, you can also watch the color of the cucumbers – as soon as the first signs of darkening appear, pour in the vinegar, bring the mixture to a boil for exactly 1 minute, and remove from heat.

13. Lay the cucumbers along with the tomato sauce into jars (to the very top).

14. Screw on the lids, turn the jars upside down, and wrap in a blanket. The preservation should sit for up to 10 hours.

You can store Georgian-style cucumbers for winter at room temperature, as long as they are not exposed to sunlight. This preparation will instantly transform a family lunch or dinner.
