Rice kutya with raisins

On Christmas Eve, Epiphany, and also for commemorating the deceased, rice kutya with raisins is served among all Slavic peoples, although in some regions it is preferred to use wheat "arnovka" instead of rice. The preparation of this ritual dish is not complicated, the main thing is that the taste is rich and sweet, filled with a variety of ingredients.

Kutya is served in a common bowl, and each participant at the table must first eat at least a spoonful of this dish.

Ingredients

  • rice - 1/2 cup (150 g);
  • purified water - 180 ml;
  • raisins - 1/2 cup (80 g);
  • walnuts - 1/2 cup (50 g);
  • almonds - a handful (20 g);
  • honey or sweet syrup - 2 tbsp;
  • butter for frying - 20 g.

Preparation

1. Prepare the ingredients for making rice kutya with raisins. You can take any rice - long-grain, round, or parboiled. Two types of raisins will create more variety and a good flavor interplay, and any nuts can be used.

2. Rinse the rice several times until the water is clear.

3. Then pour in the purified water as per the specified norm.

4. The water level should ultimately be 2 centimeters above the level of the rice.

5. Place the pot on a low heat and stir the groats at first so that it does not stick to the bottom.

6. At the same time, pour boiling water over the raisins.

7. When foam appears in the pot, remove it with a spoon and reduce the heat to the minimum.

8. Cover the rice with a lid and cook for 15 minutes.

9. During this time, rinse the raisins and dry them on a textile or paper towel.

10. Break the walnuts into small pieces with your fingers and fry them in a pan for 1.5 minutes.

11. After 15 minutes of boiling, the water should be absorbed by the rice. Remove the pot from the heat.

12. Wrap the pot in a towel and leave it for 15 minutes for further steaming.

13. Melt the butter in a pan.

14. Fry the raisins in the pan for 3 minutes. During the heat treatment, they will start to swell.

15. Transfer the rice to a bowl, adding the hot nuts and raisins.

16. Sweeten everything with honey or sweet syrup.

17. Mix the ingredients.

18. To easily remove the skin from the almonds, they should be held in boiling water for literally a minute.

19. Peel the nuts and add them to the kutya.

20. Rice kutya with raisins is ready. This is the basic recipe, based on which you can modernize its composition to your liking. For example, add candied fruits, dried apricots, or other dried fruits.
