Angel food cake is one of the most complicated yet at the same time simplest bases for a cake. Ingredients
- 5 egg whites;
- 100 g flour;
- 1/2 tsp baking powder;
- 1/2 tsp vanillin;
- 20 g starch;
- 100 g sugar;
- 1/2 tsp lemon juice;
- 1/3 tsp salt.

Preparation
1. Take the eggs out of the refrigerator in advance, as we need room temperature egg whites for this. Place the egg whites in the mixing bowl, add salt, a little lemon juice, or you can use its analog - citric acid. Start whipping the egg whites on the lowest speed of the mixer until a large number of bubbles appear.

2. Gradually add sugar, increasing the whipping speed. At the end of whipping, add a little vanillin or any other flavoring. Whip the egg whites until the sugar crystals completely dissolve, which usually takes 5-6 minutes.

3. Combine the flour and starch with baking powder in a single container and carefully introduce it in portions to the egg whites. Gently fold the batter with a spatula, stirring from bottom to top, so that the egg whites do not collapse too much.

4. Line the bottom of the mold with parchment paper and transfer the batter into it. The batter will be quite thick, but this will not affect the fluffiness of the cake.

5. Send the cake to a preheated oven at 175 degrees for about 25-30 minutes. During baking, it is prohibited to open the oven door; otherwise, there is a risk that the cake will collapse. You can check the readiness of the cake using a toothpick – pierce the cake, and if it comes out dry, the cake is ready.

6. First, let it cool for about 5-7 minutes in the mold, then carefully separate the edges of the cake from the mold and remove it. Transfer the cake to a metal rack and leave it for a few hours.

7. Cut the angel food cake into layers, after which you can proceed to the further assembly of the cake. However, this is not mandatory, as it can be a great option for tea time by itself. Look how snow-white it is when cut – it’s no coincidence it’s called angel food!
