  • purified water – 1 l;
  • rock salt – 1 tablespoon without a heap;
  • white sugar – 5 tablespoons heaping;
  • vinegar essence 70% – 1 teaspoon;
  • garlic – 1 large head or 1.5 medium heads.

Preparation

1. Prepare the ingredients. It is better to choose meaty and dense varieties of tomatoes, for example, the variety "plum". Only rock salt, not iodized, is suitable for preservation. Vinegar essence is added directly to the jar. Its amount is indicated for a 1.5-liter jar, and for a 3-liter jar, 1 tablespoon of vinegar essence will be needed, so now you can easily calculate its consumption for any capacity of glass containers.

2. A convenient way to sterilize the jars and boil the lids. Wash the tomatoes and select fruits of about the same size. To prevent the skin on the tomatoes from bursting when pouring boiling water, make a few punctures around the stem with a fork or toothpick.

3. Tightly pack the tomatoes in the prepared glass container, but do not press them down – if you shake the jar slightly, the fruits will fill the free spaces themselves.

4. Peel the garlic from the husk.

5. Grate the garlic on a fine grater (you can press them through a garlic press, but grating will produce a more beautiful shavings that will look magical on the tomatoes in brine).

6. Transfer the garlic shavings to the jar with tomatoes.

7. Boil clean water and pour it into the jar with the preparation.

8. Cover it with a lid. Let the tomatoes warm up for 20-25 minutes.

9. After this time, drain the water into a saucepan (the marinade will be prepared in this).

10. To ensure there is enough marinade and to make the calculation easier, add more clean water to the drained aromatic water until it reaches one liter. Add the salt and sugar here and boil everything for 30 seconds.
