Smart Pastry

Ingredients
- milk - 250 ml;
- eggs - 4 pcs;
- salt - a pinch;
- butter - 125 g;
- flour - 115 g;
- cold water - 2 tbsp;
- sugar - 150 g;
- vanillin - 3 g.
Preparation
1. First, you need to melt and completely cool the high-fat butter.
2. Beat the separated egg yolks with cold water, sugar, vanilla, and a pinch of salt until stiff white foam.
3. Add the cold butter, mix the mixture.
4. Sift the flour, mix the dough well.
5. Pour in the cool milk and whisk the mixture with a whisk.
6. Beat the egg whites to stiff and stable peaks. When turning the container, the egg whites should not fall out.
7. Carefully, stirring the dough from bottom to top, fold in the egg whites.
8. Pour the prepared dough into a mold greased with butter or margarine. Send the pastry to an oven preheated to 160 degrees. The estimated cooking time is until the biscuit layer of the pie is browned, about 40 minutes.
9. Let the finished pastry cool completely in the oven to obtain two layers or remove it from the oven immediately after cooking. In the latter case, three layers will be obtained. The finished dessert consists of such layers: biscuit dough, cream, creamy soufflé, or biscuit and soufflé. Cut the pastry into cubes and serve with tea.
10. Optionally, you can sprinkle the pastries with powdered sugar. Enjoy your meal!
