Chrysanthemum Pie with Minced Meat
The Chrysanthemum Pie with minced meat according to this recipe is incredibly delicious and fabulously beautiful in the shape of a flower. The pie is composite, consisting of small rolls that easily separate from each other. Airy soft dough with cheese layers and hearty meat filling.

Ingredients
- wheat flour – 600 g;
- minced meat - 350 g;
- cheese - 150 g;
- whole milk - 125 ml;
- kefir 2.5% - 125 ml;
- dry yeast - 8 g;
- sugar - 10 g;
- eggs - 2 pcs;
- vegetable oil - 60 g;
- onion - 1 pc;
- garlic - 3 cloves;
- salt - 3 pinches;
- pepper - to taste.
You will also need:
- butter (for greasing) – 15 g;
- sesame - 2 tablespoons;
A round mold with a diameter of 28 cm was used for cooking.
Preparation
1. Prepare the dough starter. Heat the milk, but not to a hot state, so as not to scald the yeast. Heat to about 35%. Pour sugar, yeast, and a couple of pinches of flour into the warmed milk. Mix, then cover with film and place in a warm place for 10-15 minutes.
2. After some time, the yeast activated and rose with bubbles.
3. Using a whisk, mix the starter with 1 egg, vegetable oil, and salt.
4. Pour in the warm kefir and mix with a whisk.
5. Sift the flour through a sieve and add it to the liquid ingredients of the dough, kneading the dough.
6. The dough should be soft and not stick to your hands. Not all the flour will go into the dough. We will leave some flour; it will be useful later. Cover the dough with a towel and place it in a warm place for 1 hour.
7. Now for the filling. Grate the garlic and onion into the bowl with the minced meat, using a coarse grater for the onion and a fine grater for the garlic. Add salt and pepper.
8. Grate the cheese.
9. The dough has risen. Take it to the table and divide it into 2 equal parts.
10. Roll out one part of the dough into a layer 3 mm thick. Cut out circles 7-8 cm in diameter using a glass. Place the minced meat in the center of the circle.
11. Fold the circle of dough with the filling like a dumpling, but do not seal the edges. Then join the ends, folding the piece at the crease of the dough. This creates a 'petal of the chrysanthemum.'
12. In the form, we lay parchment, grease it with oil, and lay out part of the 'chrysanthemum petals' with meat along the edge of the form. We roll out the second part of the dough into a layer of 3 mm. We form the same petals, but now with cheese in the middle. We lay the cheese 'chrysanthemum petals' in the next row after the meat ones. Thus, alternating, we lay out all the 'petals'. We fill the entire form. We cover it with a napkin and leave it for 15 minutes. Meanwhile, we turn on the oven to preheat to t=+180-200 ⁰C.
13. We grease the pie on top with egg (beaten), sprinkle with sesame seeds, and send it to the preheated oven for 40 minutes. We take the finished pie out of the oven, grease it with butter, and let it soak. The meat pie 'Chrysanthemum' with minced meat is ready. We cut it and serve it for lunch.
