Zebra Pie with Kefir in the Oven
The Zebra Pie with Kefir in the Oven is familiar to many since childhood. Ingredients
- sugar – 150 g (or to taste);
- butter – 100 g;
- salt – to taste;
- eggs – 3 pcs;
- cocoa powder – 10 g;
- vanillin – 1/3 tsp (or to taste);
- flour – 190 g;
- kefir – 220 ml;
- soda – 2/3 tsp.
Preparation
1. We start the preparation by preparing the ingredients. All ingredients should be at room temperature.
2. We mix sugar, butter, salt, and vanillin in a deep bowl.
3. We beat until smooth using a mixer.
4. We add eggs one at a time to the mixture, mixing each egg for about one minute.
5. We have obtained a smooth, homogeneous mass.
6. We sift the flour and add half to the total mass. We beat with a mixer until homogeneous.
7. We add soda to the kefir and mix thoroughly. There is no need to extinguish the soda with vinegar; kefir will perform this function. We add half of the kefir to the dough and continue to beat with a mixer.
8. We add the remaining flour and beat. Then we pour in the second portion of kefir and beat again. Thanks to the alternating technique, there will be no lumps in the mass. The dough turned out smooth and moderately thick.
9. We divide the dough into two equal bowls. We leave one dough light and add cocoa to the second bowl. We sift the cocoa through a sieve.
10. We have prepared the dough and proceed to shaping the pie.
11. We take a Ø22 cm mold and line it with baking paper. We grease both the bottom and sides with butter. You can use a smaller mold, which will make the baked good taller. However, the taller the cake, the greater the chance that it will crack during baking.
12. In the center of the mold, we place two spoons of white dough. The dough slightly spread across the bottom, on top of the white we place two spoons of cocoa dough. Again we take white dough, two spoons, and place it in the middle of the mold, on top of the dark dough. We continue to alternate until both doughs are finished. The idea is that each subsequent portion of dough pushes the previous portion of dough. Visually, it seems that dark and light stripes alternate, like the coloring of a zebra. The main thing is to always place the dough strictly in the center of the mold and try not to make splashes.as a result, such beauty was created.
13. With the help of a wooden skewer, apply the pattern.
14. Preheat the oven to 170° C. Bake the 'Zebra' pie with kefir in the oven for 45-55 minutes.
15. After 50-55 minutes, check the readiness of the pastry with a wooden skewer. Use a sharp knife to go around the edges and take the cake out of the mold. Let the cake cool, after which it can be decorated to your liking.
