Sponge Cookies in the Oven

Ingredients
- eggs - 2 pcs;
- starch (corn or potato) - 10 g;
- flour - 50 g;
- salt - a pinch;
- sugar - 50 g;
- vanilla sugar or vanilla - to taste and preference;
- powdered sugar, melted chocolate, or any jam - for decoration.
Preparation
1. So, we turn on the oven to preheat to 180°C, prepare the ingredients for making sponge cookies.
2. We break the eggs, separately placing the yolks and whites in different containers. The bowls should be clean and dry. Add a pinch of salt to the whites.
3. Whip the whites at high speed. This can be done using a mixer or blender with a whisk attachment. When the whites turn into a fluffy foam, you can add half of the sugar. Continue whipping the whites until stiff peaks form. This will take only two to three minutes.
4. In the bowl with the yolks, add the remaining sugar and whip into a fluffy foam. Add vanilla during the process.
5. In two to three stages, add the whipped whites to the yolks. Gently fold in the whites using a silicone spatula or whisk. We need to maintain the lightness and airiness of the whites.
6. This is the airy mass that should result.
7. Mix the starch and flour, and be sure to sift it through a sieve to aerate the flour.
8. In two to three stages, add the flour and starch to the egg mixture and fold in gently.
9. The light cookie dough is ready.
10. Transfer the mixture to a pastry bag. Cut the tip to approximately one centimeter in diameter.
11. Line the baking sheet with parchment paper. Use a silicone brush to grease the paper with vegetable oil so that the sponge cookies come off easily.
12. From a pastry bag, we pipe the dough onto parchment in the shape of sticks. You can choose the shape of the cookies yourself. Leave space between the pieces, as the dough will spread. Place the baking sheet in the oven for fifteen minutes at the same temperature of 180°C.
13. The cookies baked exactly for the right time and turned out golden. We take the baking sheet out of the oven.
14. The cookies cool very quickly. After a couple of minutes, you can sprinkle them with powdered sugar and decorate with your favorite jam or melted chocolate.
15. The light sponge cookies are ready; they can even be served at an evening tea party.
