Fluffy pancakes on curdled milk
Fritters can be cooked on any dairy products - kefir, milk, whey, fermented baked milk. I will share a recipe on how to cook fluffy pancakes on curdled milk. Such pancakes are very tender both in texture and taste, because they do not have the sourness inherent in kefir. Cooking pancakes on yogurt is very simple, but you need to follow a few rules to make you happy with the result.

Ingredients
- curdled milk - 350 ml;
- egg - 1 piece;
- flour - 200-220 g;
- sugar - 2 tbsp;
- vanilla sugar - 1 teaspoon;
- baking soda - 1 teaspoon;
- salt - 1 pinch;
- vegetable oil - 2-3 tbsp.
Cooking
1. Prepare all the necessary ingredients. It is better to use curdled milk for pancakes fatter, I took 2.5% fat, it will be even tastier if you take 3.2% fat. If you use yogurt with a lower fat content, then more flour may be needed.
2. Break a chicken egg into a deep bowl, add sugar and vanilla sugar, mix well, but you should not beat with a mixer, just mix everything well with a whisk. The amount of sugar can be adjusted according to your taste.
3. Now pour in the curdled milk and add soda. It is not necessary to extinguish soda, yogurt acid is enough to extinguish soda. Mix the resulting mass well, literally after half a minute a lot of bubbles will appear on top and the dough will begin to foam.
4. Now add some salt to balance the taste and gradually add the sifted flour, stirring constantly to avoid lumps. The dough should be smooth and uniform, similar in texture to custard. If the dough is made too liquid, then the pancakes will not turn out lush.
5. Leave the finished dough for 10-15 minutes. You don’t need to mix it anymore, and even in the process of baking pancakes, try to carefully pick up the dough with a spoon from above so as not to damage the porosity of the dough.
6. Preheat the pan and lightly grease it with vegetable oil. Spoon a small amount of dough into the pan, given that it will increase significantly in volume. Fry the pancakes on both sides over medium heat until golden brown.
