Fluffy pancakes with sour milk
You can make pancakes with any dairy products - kefir, milk, whey, or fermented baked milk. I will share a recipe for making fluffy pancakes on sour milk. Such pancakes turn out to be very tender both in texture and taste, as they do not have the sourness typical of kefir. Pancakes on sour milk are very easy to make, but you need to follow a few rules to ensure the result pleases you.

Ingredients
- sour milk - 350 ml;
- egg - 1 piece;
- flour - 200-220 g;
- sugar - 2 tablespoons;
- vanilla sugar - 1 teaspoon;
- baking soda - 1 teaspoon;
- salt - 1 pinch;
- vegetable oil - 2-3 tablespoons.
Preparation
1. Prepare all the necessary ingredients for making fluffy pancakes on sour milk. It is better to use sour milk with a higher fat content for pancakes; I took 2.5% fat, it will be even tastier if you take 3.2% fat. If you use sour milk with a lower fat content, you may need more flour.
2. In a deep bowl, break the chicken egg, add sugar and vanilla sugar, mix well, but do not beat with a mixer; it is enough to mix everything well with a whisk. You can adjust the amount of sugar to your taste.
3. Now pour in the sour milk and add the baking soda. There is no need to extinguish the soda; the acids in the sour milk are enough to neutralize it. Mix the resulting mass well, and literally after half a minute, many bubbles will appear on top, and the dough will start to foam.
4. Now add a little salt for flavor balance and gradually sift in the flour, constantly stirring to avoid lumps. The dough should be smooth and homogeneous, with a consistency similar to custard. If the dough is too runny, the pancakes will not be fluffy.
5. Let the prepared dough rest for 10-15 minutes. Do not mix it anymore, and even during the frying process, try to carefully scoop the dough with a spoon from the top to avoid damaging the dough's airiness.
6. Heat the frying pan and lightly grease it with vegetable oil. Using a spoon, place a small amount of dough onto the pan, keeping in mind that it will significantly increase in volume. Fry the pancakes on both sides over medium heat until golden brown.
7. The pancakes made from sour milk are ready, they turn out very fluffy and tender. They can be served with any jam or condensed milk.
