Baku Mutak
Baku Mutak is a roll with a nut filling. Incredibly delicious, crumbly cookies of Azerbaijani cuisine. Prepare it - you will definitely like the cookies.
Serves: 32 pieces.

Ingredients
- wheat flour - 260 g (2 cups) + 2-3 tablespoons for dusting;
- baking powder - 1 teaspoon;
- butter - 90 g;
- sour cream - 150 g;
- salt - a pinch;
- vanilla - to taste.
Filling:
- walnut kernels - 50 g;
- sugar - 50 g;
- ground cardamom - ¼ teaspoon.
Decoration:
- powdered sugar - 1 tablespoon.
Preparation
1. Place the necessary ingredients on the table.
2. Prepare the dough. Sift the flour through a sieve. Keep the butter in the freezer for a bit to harden, making it easy to grate. Grate the butter into thin shavings directly into the bowl with the flour.
3. Add sour cream, salt, baking powder, and mix. When the ingredients start to mix well, quickly knead the dough. Do not work with the dough for too long to prevent the butter from melting due to the warmth of your hands.
4. Cover the ball of dough with plastic wrap and leave it in a cool place for 20-30 minutes.
5. Prepare the nut filling for the mutaks. Chop the walnut kernels, add cardamom and sugar to the nuts, and mix.
6. After the dough has rested for 30 minutes, transfer it to the table and divide it into 4 equal balls. We will form mutaks from one ball, while covering the other three balls with plastic wrap to prevent them from drying out.
7. Roll our ball into a thin layer (circular shape) with a diameter of about 26-28 cm. Divide it into 8 triangles of equal size.
8. Place 1 teaspoon of nut filling on the wide part of the triangle of dough. Fold the tips of the triangle over the filling (this prevents the filling from leaking and burning sugar in the oven), making the mutaks neater. Then roll the filled piece like a croissant, into a roll. Hide the sharp tip of the triangle under the bottom of the roll. This way, we wrap all the pieces.
9. Line the baking sheet with parchment paper, on which we place the blanks.
10. Send the baking sheet to the preheated oven at t= +190 °C to bake until golden brown, 20-25 minutes. Adjust according to your oven. Mine had crispy, well-baked croissants in just 22 minutes.
11. Transfer the finished Baku mutaki from the baking sheet to a rack and cool. After cooling, sprinkle with powdered sugar using a small sieve.
Inside the croissant is a juicy nut filling. Enjoy your meal!
