Ingredients
- milk - 250 ml;
- high-grade wheat flour – 125 g;
- egg - 1 piece;
- vegetable oil - 1 tbsp;
- sugar - 1 tbsp;
- dry yeast - 4 g;
- salt - a pinch.
- piece of lard (for greasing the pan).
Cooking
1. Prepare the ingredients listed for the pancake batter.
2. Slightly warm up half a cup of milk (to about 30-35 degrees Celsius) and pour it into a small bowl. Add the yeast and half of the prepared sugar. Mix well, cover the bowl with plastic wrap, and place it in a warm spot for 10-15 minutes.
3. In this time, the yeast in the bowl will form a foamy head.
4. Sift the flour, add salt to it, and mix.
5. Whisk the egg gently with the remaining sugar.
6. Mix the beaten egg with the yeast mixture.
7. Pour in the rest of the warm milk (also at about 30 degrees Celsius) and mix.
8. Gradually add flour to the liquid ingredients, mixing thoroughly after each addition.
9. While stirring the batter, add half of the vegetable oil.
10. Cover the bowl and set the yeast pancake batter aside in a warm place for about 1 hour.
11. After this time, stir the batter and check its consistency. It should pour freely off the spoon. If the batter is too thick, you can add more milk or water.
12. Heat a pan on the stove, grease it with a piece of lard (or use vegetable oil if you don't have lard). Pour the batter onto the pan using a ladle. Cook the pancake until holes appear on the surface, about 30-60 seconds.
13. Flip it and cook the other side until lightly golden, another 30-60 seconds. Be careful not to overcook the pancakes.
14. Your yeast pancakes on milk with holes are ready. From this batch, you should get about 10 pancakes using a 16 cm diameter pan.
