To prepare beef ribs in the oven with a glossy sweet and sour crust and a spicy flavor, you first need to coat them with a mixture of aromatic spices. Then the ribs are slowly baked in the oven at a low temperature for at least three hours. As a result, the meat will become so tender and soft that it will literally melt in your mouth. To create the glossy crust, a barbecue glaze is prepared, which is applied to the ribs in the last minutes of baking.

Ingredients

  • beef ribs – 850 g;
  • French (Dijon) mustard – 4 tsp;
  • coarse salt – about 0.5 tbsp;
  • ketchup – 3 tsp;
  • white sugar – 2/3 tbsp;
  • dried garlic – 2/3 tbsp;
  • paprika – 1 tsp;
  • smoked paprika – 2/3 tbsp;
  • chili sauce – 1-2 tsp;
  • apple cider vinegar 6% – 1 tsp;
  • honey – 1-1.5 tbsp.

Preparation

1. Prepare the ingredients. The ribs should be meaty, with a lot of flesh. The mustard should be mild, with a soft flavor – Dijon is best suited. The salt should be coarse, with large crystals – this way you can salt the meat more evenly, and the grains won't stick to your fingers or accumulate in one place.

2. First, prepare the aromatic mixture. In a bowl with dried garlic, add sugar.

3. Add sweet paprika here (do not touch the smoked paprika yet – it will be applied directly to the meat for flavor enhancement).

4. Mix everything well.

5. Check the meat pieces on the ribs for small bones. To do this, wipe them with a paper towel. The membrane does not need to be removed – after prolonged cooking, it will soften and make the meat juicy.

6. Sprinkle the meat with salt on both sides.

7. Smear with mustard.

8. After that, sprinkle with smoked paprika.

9. Coat the pieces on all sides with the dry aromatic mixture.

10. Place the ribs on a baking sheet or in a dish (do not use oil, as this type of meat has many veins, membranes, and fat layers that will release juices during cooking).

11. Now the dish needs to be tightly sealed. To do this, cover it with baking paper on top first.

12. Then press down with foil. At this moment, set the oven to 150 degrees, and while it heats up, the meat will marinate, after which it should be placed in the oven on the middle rack. Meanwhile, you can prepare the barbecue glaze.

13. For this, place ketchup in a bowl.

14. Add apple cider vinegar.

15. The glossy crust will be created by honey – add it to the other ingredients.

16. Add a spiciness – chili sauce. Mix everything. The prepared glaze will be needed later.

17. After 2 hours and 50 minutes, remove the dish from the oven and take off the top covering.

18. Brush the ribs with barbecue glaze and put the dish back in the oven for 5 minutes (do not cover with anything). After the specified time, repeat the procedure.

19. In total, the meat will be cooked for 3 hours.
