Pickled gherkins

For salads we preserve medium and large cucumbers, while gherkin preserves are usually prepared for the festive table. This is a tasty and convenient holiday appetizer. Pickled gherkins can also be purchased in stores. Beautiful small cucumbers, available in a wide assortment, stand temptingly in rows on shop shelves. However, the most delicious preserves are usually those canned at home. To avoid spoiling the holiday, we'll can pickled gherkins for the winter ourselves.

Preparation time: 40 minutes + 3-4 hours for soaking.

Serves: 7 (2 jars of 0.5 L).

Ingredients

  • Gherkins – as many as will fit into the jars.
  • Garlic – 2 cloves.
  • Horseradish – 1 leaf.
  • Sweet pepper – 1/2 piece.
  • Hot pepper – a small piece.
  • Dill – 2-4 umbels.
  • Peppercorns – 4 pieces.
  • Mustard seeds – 1 tsp.
  • Currant leaves – 2 pieces.
  • Cloves – 2 buds.
  • Oak leaves – 2 pieces.

Marinade:

  • Salt (non-iodized) – 1 tbsp.
  • Sugar – 2 tbsp.
  • 9% vinegar – 2 tbsp.

1. Begin by: Sterilize the containers in which we will pickle the appetizer. First, wash the jars in water with baking soda, then rinse them well. After that, sterilize them by any convenient method. Sterilize or boil the lids as well. Wash and chop the horseradish leaf and dill. Peel the garlic and cut it into slices. Wash the currant and oak leaves. If desired, add a piece of hot pepper to the herbs prepared for preserving.

2. For aroma, add sweet pepper cut into rings or into small pieces.

3. Place the prepared herbs and garlic into the jar, adding peppercorns and clove buds.

4. Arrange the cucumbers on a fragrant bed of herbs and spices. Trim off their blossom ends together with a small piece of flesh.

5. Place the cucumbers vertically in the jar in rows, placing fragrant dill umbels between them. Add a pinch of mustard seeds to each jar. When the jar is filled with herbs and cucumbers, pour boiling water from the kettle over everything. Cover the jar necks with sterilized lids and wrap them in a towel for 10 minutes. Drain the water into a saucepan. After adding a few tablespoons of water, bring it to a boil again. Pour the boiling water into the jars. Covering them with lids and a towel, leave to warm for another 10 minutes. The third pour will be the marinade. For this, into the water,To the water we drained into the saucepan, add a few tablespoons of water and salt and sugar. Boil everything for 3 minutes, then add 2 tablespoons of vinegar to this marinade. Pour the hot vinegar marinade into the jars.

6. Seal the jars tightly, turn them upside down onto their lids. Cover them with a blanket and let them cool.
