Preparation

1. Rye bread is baked from yeast dough. Start its preparation by making the sponge. In a deep bowl, combine sugar and a glass of milk. Stir the ingredients with a spoon and slightly warm them in the microwave. Do not overheat the mixture, otherwise the yeast will not rise. Then add the yeast and 4 tbsp of rye flour to the milk. It is better to use 'live' yeast for baking, as dry yeast raises the dough poorly.

2. Set the sponge aside for 15-20 minutes. During this time, it should froth and double in volume. The main condition is that the sponge must be kept warm during this time. If the room is cold, it will not rise and the bread will not be successful.

3. Finely chop the herbs on a cutting board with a sharp knife. Slightly warm the remaining milk. Add salt, warm milk, flour, chopped herbs, and cumin to the frothy sponge. Leave some cumin for sprinkling the bread.

4. On a clean surface, knead a stiff dough. The dough needs to be kneaded very well. Place it on a clean plate and set it aside for about 30 minutes. During this time, it should rise.

5. Knead the dough again and let it rest once more. Repeat this procedure about 2 times to make the bread softer. Grease a rectangular mold with oil and place the rye dough in it. Grease the top with vegetable oil and sprinkle with the remaining cumin.

6. The bread is baked at 180 degrees. It should be kept in the oven for about 50 minutes. During this time, the crust will brown on the outside and it will bake well on the inside.
