Ingredients
For dough:
- flour – 530-560 g;
- 2 egg;
- sugar – 80 g;
- salt – ½ ч. tsp. (or to taste);
- yeast – 7-8 g;
- butter – 80 g;
- milk – 240 ml;
- vanillin – ⅓ tsp.
For the filling:
- sugar – 100-130 g;
- cinnamon – 15 g;
- butter (soft) – 60-80 g.
Cream:
- cream cheese – 100-150 g;
- powdered sugar – to taste;
- milk – by necessity.
Cooking
1. We prepare all the products for making yeast dough. Sift the flour, eggs and butter should be at room temperature, we take them out of the refrigerator in advance. Milk must be heated to a temperature of t-32-36⁰ C.
2. Let's prepare the sponge. In warm milk, add sugar (one teaspoon of the total), a couple of tablespoons of flour (of the total) and yeast.
3. Mix the mass with a whisk. We cover the bowl with a towel, cling film or lid and put it in a warm place for fifteen minutes so that the yeast starts to work.
4. Drive eggs into a deep bowl, add the remaining sugar and salt. We mix everything.
5. The yeast started to work, a high foam cap formed.
6. Pour yeast into the egg mass.
7. Mix flour with vanilla. Add flour to the mass in portions.
8. Add soft butter to the dough. We continue to knead the dough with a whisk.
9. When it becomes difficult to knead with a whisk, cover the work surface with flour and transfer the dough onto it. Continue kneading with your hands for about seven to ten minutes. The dough in its structure is sticky, it sticks to the hands and the table. You can additionally add thirty grams of flour, but no more.
10. Transfer the dough to a bowl pre-lubricated with vegetable oil, cover with cling film and send to a warm place to rise. For this stage, it is very convenient to use the oven. Preheat the oven to thirty degrees and turn off the heat. In the oven, we only turn on the light bulb, it gives not only lighting, but also maintains the temperature inside. Now we send a bowl of dough to the oven for one hour.
11. For the filling, prepare butter, sugar and cinnamon. The oil should be soft.
12. Mix sugar with cinnamon.
13. After an hour, we take out a bowl of dough from the oven, it has doubled in size, become soft and weightless.
14. Cover the table with a little flour and spread the dough on it. After rising, the dough completely stopped sticking to the hands. Stretch the dough into a rectangle.
15. Fold the dough with an envelope.
16. Using a rolling pin, roll out the dough into a thin, rectangular layer, five to seven millimeters thick.
17. Cover the surface of the dough with a layer of soft butter. The amount of oil must be chosen individually.
18. Cover the oil layer very generously with cinnamon sugar.
19. Roll the dough tightly into a roll.
20. Lubricate the baking dish with vegetable oil.
21. Cut the roll into portioned buns. To make the buns even, it is very convenient to cut the roll with a simple thread. Put the buns in the form at a distance from each other.
22. Bake cinnabons for twenty-five to thirty minutes at t-180⁰ C. Until golden brown.
23. Cinnabons are different in that they must be covered with butter cream while still hot. You will need cream cheese, powdered sugar and milk (a few spoons if needed). Milk can be added if the cream is thick.
24. Thoroughly mix all the ingredients into a dense, homogeneous mass.
