Classic recipe for cottage cheese sochniki
A dessert familiar and beloved since childhood – cottage cheese sochniki. These open pastries with cottage cheese are a fragrant and homemade-style treat that was traditionally made in Soviet times. According to the classic recipe, sochniki simply melt in your mouth. They are quick and easy to prepare. The result will delight you and your loved ones.

Ingredients
For dough:
- flour - 480 g;
- sour cream - 200 g;
- sugar - 200 g;
- yolk - 1 egg;
- butter (soft) - 100 g;
- salt - 1 pinch;
- baking powder - 1 tsp
For filling:
- cottage cheese (9% or better - homemade) - 350 g;
- protein - 1 egg;
- sugar - 3 tbsp;
- sour cream - 1 tbsp;
- flour - 1 tbsp;
- salt - 1 pinch.

Cooking
1. Start making the dough. Prepare all the ingredients from the list. Be sure to sift the flour with the baking powder.
2. First, mix the sour cream, sugar, and salt.
3. Whisk the ingredients together until smooth.
4. Add the flour with the baking powder to the liquid ingredients. Knead the dough in stages. It should be soft and not dense.
5. Shape the dough into a ball and place it in a bowl. Cover the bowl with plastic wrap and set aside while preparing the filling.
6. Start making the filling. Prepare the ingredients from the list. Take the butter out of the fridge in advance.
7. In a bowl, whisk the egg white with salt. Then add the sugar and mix until dissolved. Add the cottage cheese and mix with a fork. Do not use a blender, or the filling will become too runny. Finally, add the flour and sour cream.
8. Shape the sochniki. Divide the dough into two equal parts.
9. Roll out one part into a thin sheet about 5 mm thick. Use a cutter to create round shapes.
10. Remove the excess dough and set it aside for later use.
11. Visually divide each piece in half. Place a spoonful of filling on one side, leaving the other side empty.
12. Fold the empty half over the filling. Do not press it down, just "cover" the filling. Gently pinch the edges on both sides.
13. Transfer the sochniki to a baking tray lined with parchment paper. If the paper is not greased, do so to prevent sticking.
14. Preheat the oven to 180°C (top and bottom heating). Bake for 25 minutes, until golden brown but not burnt. If desired, brush the sochniki with a beaten egg yolk before baking for a glossy finish.
15. Let them cool, then dust with powdered sugar. Serve with tea, milk, or cocoa.
