Ingredients

- cottage cheese - 650 g;
- egg - 1 piece;
- vanillin - 1 packet;
- salt - a pinch;
- lemon zest - optional;
- baking powder - 10 g;
- butter - 200-230 g;
- sugar - 150-200 g.
Preparation
1. Prepare the ingredients for making cottage cheese cookies 'Goose feet'. The butter should be very cold from the refrigerator. Sugar is not used in the dough; it is only for coating.
2. In a bowl, add the egg, salt, and lemon zest to the cottage cheese. The cottage cheese can be pre-passed through a sieve.
3. Combine all the ingredients with the cottage cheese using a silicone spatula; the mixture can also be blended with a blender. This will make the mixture smooth and elastic, and the lumps of cottage cheese will be barely noticeable.
4. Set the cottage cheese mixture aside. Take a bowl with pre-sifted flour. Add baking powder and vanillin, and gently mix all the dry ingredients with a spoon.
5. Take the butter out of the refrigerator; it should be very cold. Coat the butter in flour on all sides.
6. Grate the butter on a coarse grater and rub it into the flour.
7. Add the cottage cheese mixture to the bowl with the flour and mix until homogeneous. It is easier to start with a spoon, then use your hands. The dough will be quite sticky; to make it easier to knead, you can moisten your hands with a small amount of vegetable oil.
8. The dough needs to be kneaded well, but do not overload it with flour. Also, remember the presence of butter; it should not get too warm from the heat of your hands, so work quickly with the dough. Form the finished dough into a ball and transfer it to a bag. Place it in the refrigerator for fifteen to twenty minutes to cool.
9. Dust the work surface with flour and place one third of the dough. Put the remaining mass back in the cold.
10. Using a rolling pin, roll out the dough into a thin layer three to five millimeters thick. Using a glass or a special cutter, cut out circles from the dough. The diameter should be nine millimeters. Leave the circles on the work surface and put the remaining dough in the refrigerator.
11. We start shaping the cookies, and this must be done correctly. Don't forget that sugar is the filling. Pour sugar into a flat plate. Take the prepared dough circle and place it on the sugar with the bottom side, the one that touched the table surface. The bottom side should be used because it has less flour and the sugar will stick better. Press the dough well to make more sugar stick.
12. Now the circle needs to be folded in half. The flat side with sugar should be inside. The half-circle of dough should also be pressed well into the sugar.
13. Fold the half-circle of dough in half again, with the sugar once again in the middle. Press down to ensure the cookie does not open. Repeat the same with the remaining dough.
14. In the end, we should have such cookie blanks. To make the baked goods look more like goose feet, the triangles can be cut with a knife.
15. A pattern can also be made with a fork. Both the fork and knife should be dipped in flour beforehand.
16. The future cookies 'Goose Feet' made from cottage cheese are placed on a baking sheet with a small distance between them, as the cookies will increase in size during baking. Place the cookies on parchment paper with the side that has no sugar. The paper should be greased with vegetable oil in advance.
