Preparation
1. Take cottage cheese that is not too wet, but rather dry. Pour it into a bowl and mash the curds. If you have time and desire, you can rub the cottage cheese through a sieve, but this is a labor-intensive task that will take some time. If you need to quickly prepare donuts, it is enough to mash the cottage cheese with an ordinary spoon. You won't be able to mash all the lumps with a spoon, but this won't spoil the taste of the donuts.
2. So, we have mashed the cottage cheese. Now let's move on. The next ingredient for our cottage cheese delicacy is chicken eggs. We wash two chicken eggs, wipe them with a napkin, and then break them into a separate bowl.
3. Pour sugar into the bowl with the raw chicken eggs.
4. Beat this mixture with a mixer on low speed. No mixer or just don't want to wash it later – no problem, beat the mixture with a whisk.
5. Combine our tender cottage cheese with the beaten egg mixture.
6. Now measure a tablespoon of vinegar. Quench half a teaspoon of baking soda in the vinegar.
7. Quickly send the quenched soda into the bowl with the other ingredients, mix.
8. Pour in the sifted flour.
9. Knead a soft dough using a spatula or spoon. Let the cottage cheese dough rest for a few minutes.
10. While the dough is resting, we decide on the dish in which we will fry the cottage cheese donut balls. Since our balls need to float in oil while frying, it's better to take a small and deep dish. It's convenient to use a small cauldron for this purpose. It is perfect for this task. It will be convenient to stir our cottage cheese balls in it without risking splattering everything around with fat. Pour refined sunflower oil into it. Heat the oil well in the cauldron, as for frying pies.
11. While the oil is heating, we form balls from the cottage cheese dough. The dough is sticky, so we dip our hands in flour while shaping the doughnut balls. We roll the balls to the size of a walnut.
12. We carefully lower the doughnut blanks into the heated fat. As mentioned earlier, the doughnuts should float freely in the fat. Therefore, there should be free space between them. We regularly turn the cottage cheese balls with a spatula to fry them evenly.
13. In hot fat, the cottage cheese balls swell and become larger.
14. When the fried cottage cheese balls are nicely browned in the oil, we take them out of the pot and place them on a paper towel.
15. From the first batch, we break one doughnut. We check if it is cooked in the middle to determine how well we need to fry them. Although cottage cheese balls of this small size usually fry well.
16. We sprinkle the cooled balls with powdered sugar.
Cook cottage cheese balls according to our step-by-step recipe with pleasure. Enjoy your meal.
