Adjarian khachapuri at home

Ingredients
For the dough:
- warm water (36-38°C) - 180 ml;
- yeast (dry) - 5 g;
- flour - 300 g;
- salt - ½ tsp;
- sugar - ½ tsp;
- vegetable oil - 1 tbsp.
For the filling:
- suluguni cheese - 350-400 g;
- eggs - 1 pc;
- flour - ½ tbsp;
- milk (water or cream) - 50 ml;
- yolks - 2 pcs;
- butter - 30 g.
Preparation
1. Prepare the ingredients according to the list for making Adjarian khachapuri at home.
2. For the dough starter, the water should be warm. Add sugar and yeast to the water. Mix. Leave for about ten minutes to activate the yeast.
3. After ten minutes, the starter has a good foam, indicating that the yeast is good and can be used further.
4. In a large bowl, sift the flour, add salt, and mix the dry ingredients well. Add the starter and knead the dough. Start with a spatula.
5. Then knead the dough for about 5-7 minutes on a work surface.
6. Then add vegetable oil to the dough in two stages.
7. The dough turned out soft and elastic. Shape it into a ball.
8. Grease the bowl with vegetable oil, coat the dough with oil, and transfer the dough to the bowl for rising. Cover the bowl with plastic wrap. And send it to a warm place to rise. For such cases, I use the oven as a warm cabinet without drafts. Leave the dough for one hour.
9. Separate the egg white from the yolk. We will add the egg white to the filling, and brush the khachapuri with the yolk before putting it in the oven to bake.
10. Prepare the ingredients for the filling: suluguni cheese, the egg white from one egg, flour, milk.
11. Grate the suluguni cheese on a coarse grater.
12. Add the remaining ingredients: egg white, flour, and milk to it. Mix the mass well until homogeneous. If necessary, you can add salt to taste. Divide the cheese filling into two equal parts.
13. An hour has passed and our dough has risen perfectly.
14. We also divide the dough into two equal parts.
15. Without a rolling pin, we simply form round blanks with our hands. We place cheese along the edge and fold the cheese borders. We tightly seal the 'ears', forming a 'boat'.
16. We fill the blanks with cheese filling. We brush the dough with egg yolk using a silicone brush.
17. While we are shaping the khachapuri, the oven is already heating up to the maximum temperature, which is 250°C for us. We transfer the khachapuri to a preheated baking sheet in the oven. We send it to the oven and bake until golden brown, it took us 20 minutes.
18. After twenty minutes, we take out the golden khachapuri, make a hollow in the filling, and pour in one yolk at a time.
19. We place the khachapuri in the oven for a maximum of one minute.
20. The finished khachapuri according to the classic recipe is topped with pieces of butter.
