Ingredients
For dough:
- 120 g butter from the refrigerator;
- 140 g flour;
- a pinch of salt.
For filling:
- 2 eggs;
- 70 g sugar;
- 1 g vanillin;
- 450 g cottage cheese.
Cooking
1. Cooking shortbread dough. In a deep bowl, add cold butter to the flour, cut into pieces, or grated through a coarse grater. Salt and knead the ingredients with your hands until smooth. Roll the dough into a ball and leave it in the refrigerator under a towel for 10 minutes.
2. Mix eggs with sugar and vanilla.
3. Gradually add cottage cheese and knead until smooth. It is optimal to choose not wet cottage cheese, or before adding it to the filling, squeeze out excess moisture from it. Thanks to this technique, the cake will not be too watery and will retain its shape when sliced.
4. There is no need for special equipment, we knead the filling with a fork. Lumps will remain in any case, but it is not necessary to get rid of them.
5. Line the form with baking paper or grease the edges with butter. The diameter of my mold is 26 cm, if you want the cake to turn out tall, then you should take a smaller mold size. We put the dough on the bottom and distribute it with our fingers, forming the sides.
6. We spread the filling, evenly distributing it over the shape of the pie. If desired, you can supplement the taste with berries. If you have high sides, then you can bend them.
7. We send the cottage cheese pie to the oven, preheated to 180 degrees. The baking time depends on the properties of your oven, focus on 25-30 minutes.
