Lean pies with cabbage

Very tasty lean pies with a thin crispy crust and fragrant cabbage filling. Lenten dough mixed with water makes it possible to cook these delicious pies in fasting.

Ingredients

Necessary products for lean pies with cabbage.

Products for the dough:

  • water - 375 ml;
  • flour - 500 g;
  • vegetable oil - 100 ml;
  • pressed yeast - 25 g;
  • salt - 2 tsp (without slide);
  • sugar - 1 tbsp.

Filling:

  • cabbage - ¼ head;
  • carrots - 1 pc;
  • onion - 1 pc;
  • pepper mixture;
  • coriander;
  • laurel leaf - 1 pc;
  • tomato juice - 5 tbsp. (or 1 tablespoon of tomato paste diluted in water);
  • fresh dill;
  • salt.

For deep frying, you will need sunflower refined oil.

Pour into the bowl in which we will knead the dough, 250 ml of warm water. Grind the yeast into small pieces, dissolve the yeast in water.

2. Add sugar according to the recipe to the water with the yeast dissolved in it. Then add a few tablespoons of flour. Mix flour in water until smooth. We put the container with the dough in heat.

3. In heat, the dough will rise in 20 minutes.

4. When the dough rises, add 2 tablespoons (without a slide) of salt to it.

5. Pour the remaining warm water into the bowl with the dough, mix.

6. Add the sifted flour in portions, while mixing it with the sponge dough with a spoon.

7. When kneading the dough, add sunflower oil to it according to the recipe. Next, knead the dough with your own hands, gradually adding flour to the dough. We strive to make the dough pleasant to the touch and not sticky to the hands. In this case, the dough should not be tight.

8. Covering the kneaded dough with a napkin, send it to heat for 30 minutes.

9. While the dough is coming up, let's do the filling. Chop carrots and onions.

10. First fry one onion, and then fry it together with carrots.

11. Finely chop the cabbage. Shredded cabbage lightly fried. Then, after mixing onions, carrots and cabbage with spices and tomatoes, cover with a lid. Stirring, simmer the vegetables over low heat for 10-15 minutes. It is not necessary to stew vegetables for a long time, they should crunch slightly.

12. At the end, add chopped dill to the vegetables. If excess liquid remains in the cabbage with vegetables, then leave the vegetable mixture on low heat with the lid open so that the liquid evaporates. Then remove the finished filling from the fire, cool.

13. When the dough rises, then you can start cooking pies.

14. Lubricate the surface of the kitchen table with oil. Tear off small pieces of the same size from the dough.

15. Lightly press the pieces of dough with your hands, stretching the dough into cakes.

16. For each blank, lay out a spoonful of cabbage filling.

17. We blind the ends of the blanks over the cabbage filling. Then flip them seam side down. Pressing the blanks lightly with your hands to the table, we form pies.

18. We send the prepared blanks to a deep frying pan with heated oil. Then fry the pies in a sufficiently large amount of fat over a fire (medium).
