Funchosa with vegetables in soy sauce is a popular Asian dish. It is an alternative to the famous Italian pasta, but much healthier.   • rice noodles - 200 g;
  • bell pepper - 1 pc;
  • carrots - 1 large (or 2 pieces medium);
  • onion - 1 pc. large (or 2 pcs. medium);
  • eggplant - 1-2 pcs., (optional and preference).


  • cilantro – 1 tsp;
  • paprika - 1-2 tsp (at will and taste);
  • black pepper - ½ tsp;
  • red pepper - ½ tsp;
  • coriander - 1 tsp;
  • salt - ½ tsp;
  • sugar - ½ tsp;
  • soy sauce - 2-3 tbsp;
  • vegetable oil for frying;
  • cilantro greens.


1. Prepare all the products according to the list. Choose the suitable noodles. Wash and peel the vegetables if necessary.

2. Peel the carrot, cut it into thin slices and chop it into thin, long sticks. You can also grate the carrot on a Korean grater.

3. Chop the onion into thin half rings.

4. Leave the eggplants with the peel. Cut them into thin slices and chop them into thin strips, like the carrot.

5. Cut the bell pepper into thin strips, removing the seeds and the stem.

6. To cook the noodles properly, read the instructions on the package. The rice noodles presented here need to be boiled for four minutes in salted water. After boiling, drain the noodles in a colander and rinse under running water. Leave them in the colander to drain all the liquid.

7. In the meantime, fry all the vegetables. Put a wok or another pan with a thick bottom on the stove to heat up, pour in some vegetable oil. As soon as the oil is hot, transfer the prepared onion to the pan.

8. Fry the onion slightly and add the carrot.

9. As soon as the carrot becomes soft, move the vegetables to the side, but do not remove them from the pan. Put the eggplant sticks in the pan. Eggplants love oil, so add some more oil to the pan. Fry the eggplants for a few minutes on their own, then combine them with the onion and carrot.

10. Add the bell pepper to the pan next. Stew until the vegetables are cooked.

11. To give the dish an Asian flavor, prepare the spices according to the list.

12. Pour the dry spices into one container and mix. Add the spices to the vegetables.

13. Add sugar to the soy sauce, stir until the sugar dissolves and send the sauce to the pan.

14. If there is not enough liquid in the vegetables, you can add some water. Cover the pan with a lid and simmer until done.
