  • carrots - 1 kg;
  • vinegar (6% -9%) - 5-6 tbsp (or to taste);
  • sugar - 3 tbsp;
  • salt - 1 tsp;
  • vegetable oil - ½ cup (boiling);
  • garlic - 4 cloves (large);
  • coriander (cilantro) - 2 tsp;
  • ground black pepper - 1 tsp;
  • chili pepper - ¼ tsp (or to taste).


1. Prepare the carrot and grater for Korean carrot salad. Nowadays, there are a lot of different graters for making this snack, from the simplest ones to branded shredders.

2. The carrot is chopped into even thin strips. The thinner and longer the strips are, the more impressive the carrot will look.

4. To make the carrot more aromatic, it is better to take coriander seeds and grind them during the preparation. Moreover, you need to grind half, that is, one teaspoon, and leave the other teaspoon of coriander seeds whole. The seeds can be ground in a coffee grinder or mortar, using a pestle (grinder).

5. Press the garlic cloves on the cutting board with the wide blade of a knife. This way, the garlic is easier to peel from the husk. Cut the garlic randomly and send it to the mortar with the coriander. Grind it with a pestle. The aroma of garlic and coriander has merged, this is indescribable.

6. Add salt, black and red (chili) pepper to the mortar.

7. It is better to use wine or apple vinegar. Add vinegar to the mortar and mix it with the other spices.

8. Sprinkle the required amount of sugar over the carrot. Add the spices prepared in the mortar to the carrot as well. Do not mix yet.

9. Heat vegetable oil in a frying pan. Carefully pour the boiling oil over the carrot with spices and sugar.

10. Immediately start mixing the carrot with a spoon. You have to do everything carefully, so as not to burn yourself, because the oil is very hot. But the carrot is cold, it quickly lowers the temperature of the oil. After a couple of minutes, you can mix the carrot with your hands, wearing plastic gloves. After half an hour, you can eat it as a salad. But to make the carrot soak up the spicy aromas, you need to wait a day.
