Korean-Style Carrots at Home
The famous appetizer – Korean-style carrots, who doesn't love them? This is probably the most versatile vegetable snack that works for dinner, lunch, a picnic, or even a festive table.
The snack is quick to prepare and made from readily available ingredients. The carrots will be ready in 24 hours, when all the ingredients have absorbed the spices. Ingredients
- carrots - 1 kg;
- vinegar (6% -9%) - 5-6 tbsp (or to taste);
- sugar - 3 tbsp;
- salt - 1 tsp;
- vegetable oil - ½ cup (boiling);
- garlic - 4 cloves (large);
- coriander (cilantro) - 2 tsp;
- ground black pepper - 1 tsp;
- chili pepper - ¼ tsp (or to taste).
Cooking
1. Prepare the carrots and grater for Korean-style carrots. Nowadays, there are many different types of graters for making this snack, ranging from the simplest to branded shredders.
2. Our carrots are shredded into even thin strips. The longer and thinner the strips, the more impressive the carrots will look.
3. Prepare the spices and other ingredients for delicious and aromatic carrots.
4. To make the carrots more aromatic, it's better to use coriander seeds and crush them during preparation. Crush half a teaspoon (1 tsp) and leave the other half as seeds. You can crush the seeds in a coffee grinder or mortar using a pestle.
5. On a cutting board, press the garlic cloves with the wide side of the knife blade. This makes it easier to peel off the skin. Cut the garlic randomly and add it to the mortar with the coriander. Grind everything with the pestle. The aroma of garlic and coriander blends together, and it's incredible.
6. Add salt, black pepper, and red (chili) pepper to the mortar.
7. It's best to use wine or apple vinegar. Add the vinegar to the mortar and mix it with the other spices.
8. Sprinkle the required amount of sugar on top of the carrots. Add the spices from the mortar to the carrots as well. Do not mix yet.
9. Heat vegetable oil in a pan. Carefully pour the hot oil over the carrots, spices, and sugar.
10. Start mixing the carrots with a spoon right away. Be careful not to burn yourself, as the oil is very hot. But the cold carrots will quickly lower the temperature of the oil. After a couple of minutes, you can mix it with your hands, wearing plastic gloves. After half an hour, the carrots can be eaten as a salad. However, for the best flavor, let it marinate for a day.
11. You can add fresh cilantro to the finished snack, which will make it even more vibrant. The most delicious Korean-style carrots are ready, and you will never find such a snack at the market or in a store.
