How to store cheese

Cheese is a popular product for a hearty and healthy breakfast. It is hard to imagine a buttered sandwich, many salads, and other dishes without it. When buying this product in bulk, novice hostesses wonder how to store it properly. If the basic storage rules are not followed, cheese quickly dries out or mold appears on its surface. To keep cheese fresh for a long time and not lose its taste qualities, you must adhere to the basic rules and recommendations.

How to choose fresh product

The shelf life of cheese primarily depends on its initial quality. Before purchasing, it is important to evaluate the following parameters:

  1. Integrity of vacuum packaging. Cuts and holes are open "gates" for bacteria to penetrate the product. It is necessary to refuse to purchase if any damage is found on the packaging.
  2. Cleanliness. There should be no mold or various stains on the surface of the product. It is not permissible to purchase the product in "dirty packaging."
  3. Smell. A quality and fresh product has a true "cheesy" aroma. A mushroomy or ammonia smell indicates that the product has spoiled. However, such a smell is acceptable for certain types of cheese (for example, "Camembert Lefkadia") - it is their peculiarity.
  4. Appearance. If the surface of hard and semi-hard cheeses is too dry or conversely too wet, it is a sign of poor product quality; it may have spoiled. The color of the cheese should be even.
  5. Labeling. A conscientious manufacturer always indicates on the label the address of where the enterprise is located, as well as the shelf life, date, and time of packaging. It is preferable that storage conditions and the composition of the product are indicated. When buying a product in food film, make sure that there are no stains or mold on the surface of the cheese.
  6. Price. As with many food products, the rule applies to cheese - the higher the price, the better the quality. If the price is 1.5 - 2 times lower than average, it is possible that a substitute for milk fat is included in the cheese composition.

How to store cheese in the refrigerator

Natural cheese should not be left at room temperature for long; it must be kept in a cool place. The ideal option is the refrigerator, where optimal conditions for long-term storage of the product are maintained. To keep the cheese fresh and not lose its characteristic aroma, you must follow these rules:

  1. Set the refrigerator temperature to about +5 degrees Celsius. It is preferable for the humidity level to remain at 85%.
  2. Cheese in factory packaging lasts until the expiration date - this date is indicated on the label. After opening, the food product retains its freshness for 3 days.
  3. Sliced cheese should not be left in the refrigerator for long - it quickly absorbs foreign odors. To prevent the surface from drying out, the container with sliced cheese should be covered with foil or plastic wrap.
  4. A tight container with a lid is ideal for storing dairy products. In such a container, the aroma and taste remain unchanged.

Helpful to know. Before sending to the refrigerator, portioned slices are packed in parchment paper. In food film, cheese becomes moist.

How to store cheese in the freezer

Many hostesses wonder if cheese can be frozen? This thought often arises after holidays when discovering a large stock of product in the refrigerator that is nearing its expiration date. If there is no possibility to use cheese as intended, you can extend the shelf life by freezing it.

Does cheese retain its appearance and taste qualities after thawing? Thawed hard cheese looks not very presentable, but the taste changes very little. Soft cheese spoils completely - the taste and texture change.

How long can cheese be stored in the freezer? It should not be kept frozen for more than 3 months. It absorbs foreign odors, and its color and texture change.

To properly preserve cheese in frozen form, you must follow these instructions:

  1. Divide a large piece of cheese into portions weighing 250 grams. It can be a little more, but the weight of the portion should not exceed 500 grams.
  2. Each portion of the product is wrapped in foil or a plastic bag. The best option is an airtight container.
  3. We stick a label on the container, and then use a marker to indicate the freezing date, the variety name, and the weight. This information is extremely necessary, especially if several varieties of cheese are placed in the freezer.
  4. The packed cheese is sent to the freezer, where the temperature is maintained around -4 degrees.

Cheese should be thawed in the refrigerator; it cannot be placed directly on the table. A sudden change in temperature can spoil its appearance, causing it to simply become mushy. For thawing, 12 hours is sufficient - a piece is transferred to the refrigerator in the evening, and by morning, the cheese can be served for breakfast.

How to keep cheese fresh without a refrigerator

At room temperature, any variety of cheese spoils quickly. To extend the shelf life, the product is wrapped in a natural cloth soaked in a salt solution and transferred to the coolest place in the apartment, where sunlight does not penetrate. The cloth with the saline solution is changed once a day. With this method, cheese retains its qualities for several days at most.

The product can be stored in cold water. For this, portioned slices are wrapped in parchment paper, placed in a container with a tight lid, and submerged in a pot of icy water. To prevent the container from floating to the surface, it is pressed down with a weight. As the warm water heats up, it is replaced with cold water.

Shelf life of various cheese varieties

The choice of food products today is simply enormous. In large retail chains, you can find familiar varieties of cheese as well as exotic options. Each name has a specific shelf life. To avoid confusion in this variety, we will provide approximate storage times.

  • Soft cheeses have a cottage cheese or creamy consistency. During production, they are not subjected to high thermal treatment, so they usually do not keep for long - up to 5 days. If the product is securely packaged, this time increases to 3 months. A temperature from 0 to +8 degrees is suitable for cheese.
  • Hard varieties, due to their dense structure, spoil much more slowly. At a temperature from -4 to 0 degrees, cheese can last from 1 month to a year, provided that the packaging is not damaged. Semi-hard cheeses store well under the same conditions.
  • Smoked cheese in paraffin packaging is suitable for eating for 2 months. If the packaging is plastic, then the shelf life increases to 4 months. Smoked cheese is stored in the refrigerator at +2 to +6 degrees.
  • Processed cheese has the longest shelf life, especially if it contains vegetable fats. However, in this case, it is not called cheese but a cheese product. Despite the tight packaging, processed products must be kept cool (ideal temperature - just above 0 degrees).

It is useful to know. To determine the period during which cheese remains suitable for consumption, it is necessary to carefully study the label. It always indicates the production date, month, and day of expiration, as well as storage conditions.

How to determine if the cheese has spoiled

If storage conditions are not met, even the freshest cheese spoils quickly. Too high a temperature leads to product spoilage. In warmth (above +6 degrees), pathogenic bacteria develop quickly, resulting in mold on the surface - such cheese is unsuitable for consumption.

Unsuitability for consumption is determined by the information on the label. If the shelf life has expired, such a product should not be eaten, especially in fresh form, without thermal processing. The presence of mold and slime on the surface of the cheese, as well as an unpleasant smell emitted after opening the packaging, indicates that the cheese has spoiled. It should be discarded; such a product cannot be used for food.

By following the recommendations from the article, cheese can be kept fresh. However, over time, its taste qualities deteriorate, so it is not recommended to buy it in bulk; it is better to buy a small package for a couple of days.
