To ensure that this offal is soft after boiling and has a refined taste, it needs to be boiled correctly. This recipe explains step by step how to boil chicken hearts at home.

  • bay leaf – 2-3 pcs;
  • allspice – 4 pcs;
  • salt – 1 tsp.

Preparation

  1. Prepare the necessary products. Rinse the hearts thoroughly under running water and sort them, as they often come with other offal, and it’s not worth cooking them together since the cooking time for various offals differs.
  2. Cut the chicken hearts in half and remove the vessels. If desired, the fatty tissue and blood clots can be removed. We did not remove the fatty tissue, as it makes the broth more nutritious.
  3. Transfer the offal to a pot and pour enough water to cover the hearts by about 1-2 centimeters. Set to maximum heat and bring to a boil.

  4. After boiling, reduce the heat to slightly below medium, so the liquid is barely bubbling. During the cooking process, foam will form. Remove it with a slotted spoon or a ladle.

  5. After removing the foam, add 2-3 bay leaves and 4 allspice berries. Cook covered for about 20 minutes. After the specified time, add half a teaspoon of salt and stir everything. Cook for another 10 minutes.

  6. Check the readiness of the chicken hearts by piercing them with a fork. If they are easily pierced, then they are ready.

  7. Remove the pot from the heat and let it cool completely. Remove the boiled chicken hearts from the liquid and use them as intended. The broth, in turn, can serve as a good base for soup.
