- While boiling, you can prepare the batter for the future dish. Separate the egg whites, which should be cooled. In the meantime, whisk the yolks with a pinch of sugar and salt. Add oil, milk, and sifted flour. Chop the available greens.
- Just before frying the cabbage, fold the egg whites, whipped into a stable foam, into the liquid batter. Gently mix to prevent the whites from sinking. Heat the fat to 170°C in a deep dish. Take one piece of boiled cabbage, pierce it with a fork, and dip it into the batter. Then, lower it into the heated fat. Remove it when a delicious crispy crust appears on the cabbage.
