Chicken soup with champignons and potatoes is a simple and fragrant dish. This delicious soup takes about 80 minutes to prepare. It will leave no one indifferent with its taste. We will use chicken thigh for the preparation, which can be replaced with chicken fillet.

  • chicken thigh, cut in half (I have it with skin);
  • 200 grams of champignons;
  • 2 large potatoes;
  • vermicelli - 150 grams;
  • 1 onion;
  • 1 carrot;
  • vegetable oil (optional for those who will cook the soup with "frying");
  • we will use salt and pepper mixture as seasonings.

1. To start cooking, first, we need to boil the broth. Place a pot with cold water, not filled to the top, on the fire. Add the chicken pieces (for diet followers, you can use only fillet). Boil the broth for about an hour, periodically skimming off the foam.

2. Cut the mushrooms in any shape.

3. Next, take the onion, cut off the tip, cut it in half and remove the skin. Now cut the onion every centimeter, then in the middle and after that downwards.

4. Peel the carrot and grate it on a fine grater. All vegetables are ready. Pour all the prepared vegetables into the pot with boiling broth. Reduce the heat. It’s time for the potatoes. Peel it, cut it into medium pieces and send it to the pot.

5. After 25 minutes, add the vermicelli. Salt, pepper, and after 5-7 minutes, you can turn it off.
