
Meringue roll at home
The tender, crumbling outer layer of this dessert is filled with cheese cream that turns this treat into an incomparable delight. Fresh seasonal berries significantly enhance this sensation. And it's actually very simple to make a meringue roll at home.

For preparation, use a baking sheet size: 30 x 32 cm.
Ingredients

- chilled egg whites - 130 g (this is 3-4 eggs);
- powdered sugar - 180 g;
- starch (corn starch is more suitable for desserts) - 10 g;
- citric acid - a pinch;
- vanillin - a packet.
Cottage cheese cream:
- cottage cheese (just not low-fat) - 250 g;
- chilled cream (fat content 33% or higher) - 100 ml;
- powdered sugar - 20 g;
- fresh strawberries - 250 g.
Preparation
- Gradually increase the speed of the mixer to maximum. Whip the egg whites until they become dense and glossy. When raising the beaters, a so-called "bird's beak" forms, which securely holds its position and does not fall. At the very end, add the starch and turn on the mixer for another 10 seconds. If the egg whites start to separate and become dull, it means they have been overwhipped and the meringue will not turn out, so you need to stop whipping in time.
- Decorate the item with chocolate webbing, strawberries, and mint leaves.
Light and fresh, dissolving in the mouth and truly summery, the meringue roll at home turns out even better than the store-bought version, as it contains only natural ingredients and no preservatives.
