Khmeli-suneli (basic recipe)

Khmeli-suneli is a Georgian seasoning that is added to many national dishes. It translates as dry seasoning or spice. Khmeli-suneli is added to kharcho soup, satsivi, chakhokhbili, adjika, basturma and other dishes.

It is not always possible to buy quality seasoning in the store, but it can be very easily prepared at home.

There are different variants of Khmeli-suneli, with varying amounts of spicy herbs. The seasoning can consist of 6, 7, and even 12 spices. However, not all spices are suitable for different dishes. Therefore, there is a basic recipe, and it consists of three main spices.

Ingredients

  • utscho suneli – 1 tsp;
  • ground coriander (cilantro seeds) – ½ tsp;
  • imeretian saffron (marigold flowers) – ½ tsp.

All spices should be dry and well ground.

Preparation

  1. 1 part Utscho suneli;
  2. 0.5 parts – coriander;
  3. 0.5 parts – imeretian saffron.
