Cherry strudel made of puff pastry

Perhaps every hostess has found herself in a situation where she needs to prepare a delicious dessert, but there is barely any time for it. Cherry strudel made of puff pastry, which is advisable to keep in the freezer for such occasions, is just the recipe that will save the day.

A thin sheet of puff pastry (store-bought or homemade) wraps around the juicy filling with several turns, the top crust of the strudel glistens golden-brown, and the cut barely holds the cherry filling. It's hard to resist such a treat.

Ingredients

  • cherries – 500 g;
  • white sugar – 50 g for filling + 20 g for sprinkling;
  • almond slices – 30 g. (or any other chopped nuts);
  • vanillin – 1 packet;
  • starch (preferably corn starch) – 20 g;
  • butter (soft, but not melted) – 35 g;
  • puff pastry – 500 g;
  • egg yolk – 1 piece (for greasing).

Preparation

  1. Prepare the ingredients for making cherry strudel with puff pastry. Take the dough out of the freezer and leave it on the table. While the filling is being prepared, it will gain some pliability, enough for rolling out. Preheat the oven to 190 degrees.

  2. Remove the pits from the cherries.

  3. It's best to mix the starch, vanillin, and sugar in a separate bowl. This will prevent lumps from forming when heating the filling.

  4. Pour this mixture over the cherries placed in a saucepan.

  5. Start heating the filling, stirring it constantly. When the juice released thickens with the starch, turn off the heat.

  6. To speed up the cooling process, place the saucepan with hot cherries in cold water (this will take about 7 minutes).

  7. Dust the surface for rolling out with flour. Usually, store-bought puff pastry is packaged in squares with sides of 20 cm. You can make 2 small strudels or 1 large one by overlapping 2 sheets. Also dust the dough with flour and roll it out to 2-3 mm, especially pressing down the connecting seam carefully.

  8. Using your hand or brush, spread soft butter over the sheet, leaving a 3-4 cm ungreased area all around. Although puff pastry contains a sufficient amount of fat, additional greasing will help the layers to separate better.

  9. Sprinkle sugar on top.

  10. To give the strudel a special charm, also sprinkle almond slices (they can be replaced with any chopped nuts).

  11. On the edge, leaving the ungreased area, place the cherry filling.

  12. Carefully roll up the strudel.

  13. Pinch the ends tightly, as well as the loose longitudinal edge of the dough along the entire length of the roll.

  14. Transfer the strudel, curving it into a crescent shape, onto a lined baking sheet.

  15. Grease the top with egg yolk.

  16. Bake the preparation for half an hour.

    After cooling, the pastry will settle slightly. Sprinkle the glossy crust with powdered sugar, cut the cherry strudel made of puff pastry into convenient serving pieces, which are then divided into portions. All that’s left is to enjoy the quickly made dessert to the fullest.
