  • eggs - 3 pcs.;
  • salt - a pinch;
  • flour - 75 g;
  • vanilla - a pinch.

For the cream:

  • milk - 150 g;
  • butter - 100 g;
  • cocoa - 5 g;
  • corn starch - 15 g;
  • sugar - 60 g;
  • vanilla - optional.

Addition:

  • raspberry liqueur - optional;
  • chopped nuts - 50 g.

Preparation

  1. First, you need to prepare the custard base for the cream. Mix sugar with starch and vanilla, add milk. Cook the mixture until thick over heat, then cover with plastic wrap in contact and cool to room temperature.

  2. Then, proceed to prepare the sponge base. Beat the eggs with vanilla, sugar, and salt into a strong and fluffy thick mass. The whisk pattern should be clearly visible on the eggs when the right consistency is reached.

  3. Sift the mixture of cocoa and flour into the eggs. Gently mix the batter with a spatula.

  4. Pour the batter onto a flat baking sheet lined with parchment. Spread it into a thin rectangle and place it in a preheated oven at 180 degrees. If using an electric oven, bake for 6-7 minutes on the "top-bottom" mode. In a gas oven, bake longer, about ten minutes. After five minutes of baking, the oven can be opened to check for readiness by inserting a wooden skewer.
